Recipe of the Week: Chicken Tacos

INGREDIENTS:

Boneless skinless chicken breasts

Taco seasoning 

Chicken broth

Can of rotel (or substitute salsa)

Jar of queso

Taco shells or quesadillas 

Your favorite taco toppings

 Directions: 

  1. Spray slow cooker (crock pot) with cooking spray
  2. Layer chicken in crock pot and sprinkle with taco seasoning 
  3. In a bowl, combine chicken broth and rotel (or salsa) mix well and pour over the chicken 
  4. Cook on high for 4-6 hours
  5. When ready, drain excess liquid and shred chicken
  6. Spoon queso onto chicken and spread evenly. Cook on low for 20 minutes 
  7. Serve in a taco shell or quesadilla with your favorite taco toppings!
