Recipe of the Week: Cheesy Ranch Chicken

Alexis Hillard, a senior at Shippensburg University, created this recipe.

Ingredients:

  • 3 pounds of chicken breast
  • 1 sleeve of Ritz garlic butter crackers
  • 1 cup of ranch dressing
  • 2 packs of ranch dressing seasoning
  • 1 teaspoon of garlic salt
  • A packet of blended cheeses
  • A dash of salt and pepper
  • Directions:

    1. You will want to take 3 pounds of chicken breast and clean it off. You will need to cut off the excess areas of fat.

    2. Take a sleeve of the Ritz garlic butter crackers and crush them into a Zip-lock bag.

    3. Add the ranch dressing seasoning, garlic salt, 1 cup of blended cheese and a dash of salt and pepper into the bag.

    4. Cover the clean chicken breast with 1 cup of ranch dressing and place the ranch covered chicken breast in the bag of seasoning you have created. Covering the chicken breast with regular ranch dressing first will allow the seasoning to stick and give you a delicious juicy taste from the seasoning.

    5. Shake the chicken in the bag until the chicken is coated with the seasoning.

    6. Place the coated cheesy ranch chicken onto a pan with foil. Take the remainder of the mix and pour it over the chicken.

    7. Place the chicken in the oven for about 40 minutes at 400 degrees.

    8. Sprinkle a satisfying amount of the blended cheeses on top of the chicken in the last 3 minutes.
