Dessert in a mug: Lemon blueberry edition

While it may technically still be winter, it is starting to feel like spring outside. The temperature is starting to warm up and the trees are beginning to get their leaves back. This time of year is when all the new seasonal flavors start coming out, with everything from carrots to rhubarb. If you are wanting to celebrate this season, this lemon blueberry mug cake is the perfect way to do so. This sweet treat is easy to whip up in a dorm room, and can double as an easy blueberry muffin recipe if you exclude the lemon. 

Ingredients: 

1 ½ tablespoon melted butter 

2 tablespoons sugar 

¼ cup of flour 

2 tablespoons milk 

1 tablespoon plain Greek yogurt 

½ teaspoon baking powder 

½ teaspoon vanilla extract 

Zest of half of lemon 

10-12 blueberries 

1 pinch of sea salt 

Optional: Whipped cream and additional blueberries for topping 

Instructions: 

1. Whisk together sugar and butter until smooth. 

2. Add in the vanilla extract, milk and yogurt. Whisk together until smooth. 

3. Add in the sea salt, lemon zest, baking powder and flour, then whisk to combine 

4. Gently fold in the blueberries 

5. Microwave on high for about 1 minute and 30 seconds in a microwave safe mug. 

6. Allow the cake to cool down for 5 minutes. 

7. Add the whipped cream and additional blueberries if desired. 

This delicious and easy dessert is a great way to get in the mood for the spring season.
