Dessert in a mug: Strawberry edition

As the Valentine’s Day celebrations wrap up, many are left wanting a dessert with a different flavor profile from anything that can be found in a heart-shaped box of chocolates. This strawberry cake in a mug recipe is a refreshing relief from the richness of all the chocolate you ate last weekend. 

Ingredients: 

4 tablespoons flour 

2 tablespoons sugar 

1 ½ tablespoons melted butter or oil 

3 tablespoons milk 

½ teaspoon baking powder  

¼ teaspoon vanilla extract 

¼ cup chopped fresh strawberries 

Optional: whipped cream and additional chopped strawberries for topping 

Instructions: 

1. Mix the flour, baking powder and sugar into a microwave safe mug. 

2. Add the milk, vanilla extract and the melted butter or oil. 

3. Stir in the chopped strawberries. 

4. Microwave on high for about 90 seconds, or until the cake is fully cooked. 

5. Add the whipped cream and additional strawberries if desired. 

This is the perfect easy and quick treat to enjoy after a long day of classes.
