Recipe in a mug: Carrot cake edition

After a long and brutal winter, the season of spring is finally upon us. The birds are chirping, the sun is (sometimes) shining and we can finally walk outside without a winter coat. In the spirit of finally having nice weather, you should make this easy and delicious carrot cake in a mug. While the flavor is inspired by Easter, this flavorful and simple treat is perfect for any day. 

Ingredients: 

  1. 1 ½ tablespoons butter, melted 
  2. 2 tablespoons brown sugar 
  3. ¼ tablespoon vanilla 
  4. 3 tablespoons milk 
  5. ¼ cup flour 
  6. ¼ teaspoon baking powder 
  7. ¼ teaspoon ground cinnamon 
  8. 2 tablespoons finely shredded carrot 
  9. Optional: Whipped cream 

Instructions: 

  1. In a microwave-safe mug, whisk together the melted butter, brown sugar, vanilla, milk, flour, baking powder and cinnamon. 
  2. Fold in the shredded carrots into the mixture. 
  3. Microwave the cake batter for about a minute to a minute and a half, depending on your microwave. 
  4. Once the cake cools, add the whipped cream if desired. 

This carrot cake in a mug is the perfect treat to have after a long day of classes, or if you just need to satisfy a sweet tooth.
