After a long and brutal winter, the season of spring is finally upon us. The birds are chirping, the sun is (sometimes) shining and we can finally walk outside without a winter coat. In the spirit of finally having nice weather, you should make this easy and delicious carrot cake in a mug. While the flavor is inspired by Easter, this flavorful and simple treat is perfect for any day.
Ingredients:
- 1 ½ tablespoons butter, melted
- 2 tablespoons brown sugar
- ¼ tablespoon vanilla
- 3 tablespoons milk
- ¼ cup flour
- ¼ teaspoon baking powder
- ¼ teaspoon ground cinnamon
- 2 tablespoons finely shredded carrot
- Optional: Whipped cream
Instructions:
- In a microwave-safe mug, whisk together the melted butter, brown sugar, vanilla, milk, flour, baking powder and cinnamon.
- Fold in the shredded carrots into the mixture.
- Microwave the cake batter for about a minute to a minute and a half, depending on your microwave.
- Once the cake cools, add the whipped cream if desired.
This carrot cake in a mug is the perfect treat to have after a long day of classes, or if you just need to satisfy a sweet tooth.
