Recipe of the week: Ginny’s Creamy Corn Chowder

Ingredients: 

1 Tbsp. butter

1/2 yellow onion, chopped

1 clove of garlic 

¼ cup of chopped fresh parsley 

3 Tbsp. of all-purpose flour

2 ½ cups of milk

1 cup chicken broth

2 (12 ounce) cans whole kernel corn, drained

6 pieces of bacon 

6 peeled and chopped potatoes

1 teaspoon salt

1 teaspoon pepper

1 teaspoon cayenne pepper


Instructions: 

Add butter to a pot on medium heat

Chop and sauté onions, garlic and parsley in the pot with the butter until tender

Whisk in flour to make a paste 

Pour in milk and chicken broth 

Add the two cans of corn 

Fry and chop bacon, add to pot

Peel and dice potatoes, boil potatoes in a separate pot

Strain potatoes and add to soup 

Simmer on low for an hour 

Season with salt, pepper and cayenne pepper 

Ladle into bowl and top with crackers and enjoy!
